Food and culture in Peru

Peruvian food is one of the most recognizable parts of the country’s culture. Dishes such as ceviche, lomo saltado, and aji de gallina (my personal favorite) reflect a mix of Indigenous and mainly Spanish influences. This also sometimes includes Asian and African cooking styles as well. That blend is one reason Peruvian cuisine stands out internationally.

Food also connects closely to regional identity. Coastal dishes often rely on seafood and citrus, while mountain cuisine may use more vegetables and hearty stews. Lima is especially known for combining tradition with modern restaurant culture.
